"IF YOU EDUCATE A WOMAN,
A Simple, delicious and nutritious traditional Kenyan dish!
1 can garbanzo beans
1 can black eyed peas
1 can red beans
(You can use any beans. Canned beans are easier,
but soaked dry beans can also be used.)
1 onion chopped
2 potatoes cooked
1 package frozen white corn
1 package frozen collard greens or any greens
Several garlic cloves
½ can tomato paste
2 or 3 tomatoes
Couple of tablespoons of olive oil
½ tsp cumin
¼ tsp red chili powder
Some green chilies
¼ tsp turmeric
Brown the onion and garlic in the oil; add tomato paste, tomatoes and frozen greens. Let it simmer until greens are mostly cooked. Add spices, corn, potatoes and beans. Let it all simmer for 20 or so minutes. Taste and adjust seasoning and cooking time.
